The cook shared his food philosophy in one of the headline events of this year’s Off the Shelf literary festival.
His visit to the city coincided with the launch of his latest book, Plenty More, the follow-up to his award-winning and best-selling Plenty.
The festival, with more than 200 events, runs until November 1.
