The new Sheffield sushi restaurant where you can order Japanese food - and pizza - at the same time

Every morning sushi restaurant owner Tomo Hasegawa still collects the fresh fish served for his customers each night.

The trained chef, who launched Edo Sushi with school pal Michael Simpson nine years ago, says a focus on high standards is what sets the business apart.

“We're quite stringent on quality, especially with the fish that we get”, he said.

“We fillet all our fish ourselves. It’s the only real way to tell how fresh a fish is.”

Tomo spoke as he and Michael launched their third venture in Sheffield, a new Edo eatery in a former function room at artisan pizza specialist Craft and Dough on Campo Lane in the city centre.

It follows their initial restaurant and takeaway site tucked away on nearby High Street, a foray into Leeds and their second venue at food hall Cutlery Works run by The Milestone Group, which opened in Kelham Island last year.

It was through that final connection they were offered the chance to take up the unit at Craft and Dough, also run by The Milestone Group.

Customers who visit the restaurant will be able to order both sushi and pizza, whether they sit upstairs in Craft and Dough or downstairs at Edo, catering to couples or groups who want to dine together on different cuisines.

Tomo said it was a good example of two Sheffield brands working together to cater for different appetites.

He added: “When you get a group of people eating out, three of them might fancy sushi but one of them wants pizza.

“Here we can do that. It’s almost like Cutlery Works but on a smaller scale.”

The team have brought some of their most popular dishes to the new opening, as well as some new ones.

They include Gyuudon, thin slices of beef and onion pan fried with sweet soya, poured on boiled rice with pickled red ginger, poke bowls and pork ramen. There is also a selection of hand crafted sushi and Japanese tapas, which main meals or the equivalent amount of sushi or small dishes coming in at between £9 and £12.

Tomo added: “Gyuudon is very typical in Japan, there’s a stall selling it in every street. We’ve got a great selection of Japanese drinks here as well, including Kirin beer which some places do but it’s really exciting to pull it myself on draft!

“We also have a selection of different sakes, Japanese whiskeys, gins and rums which people can ask for.

“With everything we try and keep it very reasonable so people can be full for about £10.”
