A Sheffield chef who sprinkled his magic on a roast and Yorkshire pudding dinner has been showing off his creation.

Chef Allam Shah Ullah – who works at Cutlers Spice in Leighton Road, Gleadless – jetted to Kolkata in India, with Michelin-starred chef Dominic Chapman, to showcase his special talents at the Taste of Britain Curry Festival.

The event was organised by UK-based trade magazine Curry Life and the Hyatt Regency Hotel Kolkata in West Bengal.

The event is held to promote the skills of British chefs abroad.

It also aims to introduce diners to the best of British food.

The Taste of Britain Curry Festival has been well received in countries where curry is not well known.

And at the festival in India, where curry originated, customers were said to be bowled over by Allam’s Asian take on the traditional British roast.

However, because beef was off the menu for religious reasons, Allam prepared his special Yorkshire dish with lamb, giving it a slightly spicy twist.

He said: “I was very pleased to be included in the team and also to be given the opportunity to work with famous chefs like Dominic Chapman.

“Presenting the best of British foods in Kolkata, India was truly an amazing experience.”

Allam and a team of five other chefs from around the UK were asked to create a mouth-watering menu of more than 70 different fusion dishes for diners at the festival to sample.

And British favourites such as Lancashire hot pot, coronation chicken, the Birmingham balti and the chicken tikka masala also went down a treat.

Dominic, who has one Michelin star and is chef at The Royal Oak Paley Street in Maidenhead, Berkshire, said: “I am delighted Curry Life Magazine has initiated this festival in Kolkata, a city which has had historic links with Great Britain for many centuries.

“The festival was about creating a partnership and about learning from each other.

“We wanted to fly the British culinary flag and learn from our Indian counterparts too.”
