How to create a healthy lunch box

Packed lunches eh? Days were when we were all happy with a cheese sandwich, carton of drink, some bruised fruit and a packet of crisps.
But that's all changed now, as the numerous healthy eating campaigns over recent years have emphasised the need to ensure children are getting the nutrients they need to see them through the day.
As the start of the new school term gets into gear, new research released by the Federation of Bakers reveals that over 51% of parents have been driven into action and are ensuring that their children go to school with a healthy lunchbox. 55% of parents say that their child still takes a packed lunch to school rather than getting their meal from the school canteen or another source. Plus, it seems that the daily task of making the lunchbox falls to 60% of mums compared with only 9% of dads.
But what do the kids think about their lunches? The survey revealed that children don't always appreciate their parents' best lunchbox intentions. 30% of 5-11 year olds said they have been embarrassed by the contents of their school lunchboxes. Reasons given include boring or unappetising food (40%) or their lunch actually looking too healthy (33%)! 16% claim that they're embarrassed if their lunch is smaller than other and 14% said their lunchbox was likely to get the thumbs down if it featured supermarket own-label rather than well-known brands.
With this in mind we've joined forces with Anneka Rice to offer some simple tips on creating the perfect lunchbox. With 4 children of her own, Anneka knows how hard it can be to keep lunch time fun and health.
