A Sheffield vegan has created a healthy eating plan to help boost her training for a charity running challenge.
Rachel Ward will run the Greater Manchester Marathon in aid of Weston Park Hospital Cancer Charity - with the help of a ‘clean’ vegan diet.
Rachel, aged 24, of Aston, said: “I have never run a marathon before, in the past I have done 5k and 10k races and feel a marathon would be a massive accomplishment.
“I have completely changed my diet. I have been vegan for a year already but after Christmas I decided to eat a really ‘clean’ vegan diet to complement my training.
“I don’t eat processed foods and eat plant-based foods, and I have found that this has really benefitted my training.
“I have more energy and can push myself that little bit further.”
Rachel, a coffee shop manager, chose to support Weston Park because her partner’s grandmother was diagnosed with terminal cancer just a few weeks after losing her husband. A number of other friends and family members have also been cared for at the hospital.
