Laura Drury, 35, of Barnsley, runs TotallyTipi, providing unusual giant Nordic teepees for weddings and parties.

She loves cooking and, armed with the correct version of Mark Woodward’s Beetroot Tea Loaf - we printed it last week with 200g of demerara missing from the ingredients - baked a beet treat.

“Beetroot and tea loaf sounded an unusual combination, I couldn’t wait to try it out,” says Laura. “It came together easily to a bright pink mixture, but after baking my cake came out a lovely dark brown. I had considered reducing the amount of sugar in the cake, but it wasn’t too sweet. The cinnamon flavour was very subtle and balanced perfectly with the nutmeg. The beetroot taste was almost undetectable but gave a moist, almost chewy finish with the raisins and it was lovely smothered in salty butter with a cuppa. I’ll definitely be making this again!
