Exploding cake 'defused' in time to treat a Countess - SLIDESHOW

CAKES with class were on the menu when a countess came to town - made with just a little help from boffins at Sheffield Hallam University.

The university welcomed VIP guest Sophie the Countess of Wessex to meet Emma Killilea, founder of Delicious Alchemy, a city-based supplier of gluten- free foods.

Emma's special ginger cake was the star of the show - developed with the help of experts in the Hallam University's kitchens.

Emma said: "When I first began to develop Delicious Alchemy's ginger cake, it would explode in the oven after exactly eight minutes."

"After a great deal of time and effort, one of the tutors from Hallam made a suggestion, which led to us resolving the problem."

The visit was arranged after the multiple award winning business was brought to the attention of the Royal family.

Emma set up a meeting with the countess at Hallam - where she studied and trained.

She said: "It was an honour to meet the Countess and explain what we do."
