Don’t just reach for a lemon or the Golden Syrup on Pancake Day next week...

The Shrove Tuesday tradition can make a healthy main course, say organic foodies Chris and Mary Watson.

This is one of the recipes that accompany their deliveries:

Soufflé Veggie Pancakes (Serves four)

Make four basic pancakes and chop up 300-400g of leftover cooked veg (e.g. leeks, roots, broccoli).

Separate four eggs, then melt a knob of butter in a pan. Add 50g flour and cook gently, stirring constantly, for 1-2 mins. Turn heat down and slowly stir in 300ml milk.

Increase heat and stir until thickened. Add half a teasp. of Dijon or coarse grain mustard and cheese. Salt and pepper to taste. Leave to cool for a few mins, then stir in egg yolks and veg. In a separate bowl, whisk egg whites into peaks. Fold into the mixture. Put pancakes in a baking dish and spoon some veg mixture down the middle of each. Fold into open-ended parcels, sprinkle with extra cheese and bake at 200˚C for 20 mins.
